Anything Mexican and I make my own chips in the oven so they aren't too bad. I love refried beans and corn tortillas. I make a whole meal from beans, rice and a couple tortillas with lots of salsa. Gorditas are so great but hard to find now. They are thicker corn tortillas and can be served with chili on top....mmmm....a little like polenta. Even a salad with a flair for the Mexican can send me on a bliss trip. I grew up in Texas (although I am now a Colorado resident and lived in Arizona and love both) and we Texas women have a cure for depression. Cry in bed with the covers pulled up until you are sick of crying, get up, shower and doll yourself up and go out with girlfriends and eat Mexican food. Works every time!
