Few things feed a hungry football-watching crowd as well as chili. When my husband and I had a bunch of friends over to watch the playoffs a few weeks ago, we made two chili recipes—a vegetarian chili and a hearty, meaty chili. Both chilis were a hit and the ideal meal to serve at this type of gathering because there were only two pots to clean up afterward. Plus chili is loaded with antioxidant-packed vegetables, fiber-rich beans and (if it’s not vegetarian) lean cuts of beef and pork, which makes it a satisfying and healthy meal.
So this weekend for the Super Bowl, I’m going all out with a chili extravaganza.
I’m going to cook vegetarian chili, meaty chili, white chili and, of course, cornbread.
Here’s my menu:
Zesty Wheat Berry-Black Bean Chili: This vegetarian rib-sticking chili offers a hearty mix of wheat berries, beans, peppers and onion. If you love spice, add an additional chipotle pepper to crank up the heat. Cooked wheat berries will keep for up to 1 month in your freezer and there’s no need to thaw them; just stir them directly into the chili.
Beef & Bean Chile Verde: This Chile Verde recipe takes just 30 minutes to make, thanks to quick-cooking ground beef and store-bought green salsa. Make it a meal by serving with fresh cilantro, red onion and Monterey Jack cheese.
White Chili: I just ate white chili for the first time a few weeks ago and, man, is it good. Fragrant "white" chili is an unusual, delicious alternative to traditional tomato-based chilis. Serve this with lime wedges and a dollop of sour cream or a sprinkling of cheese.
Cheddar Cornmeal Biscuits with Chives: I love traditional cornbread, but these chive-flecked cornmeal biscuits are so amazing, and easy to make, that I’m going to bake them instead.
