SOUP SOUP SOUP!!!!
I can't think of a more healthy way of loosing weight than eating soup. I know everyone has a version so I am not going to give one here, I just want to tout the benefits of soup. I weighed 265 and I am only 5'4", not a good picture. I went to a nature path for other health reasons and this is what she said to me: "Eat soup, lots of soup, any kind of soup".
I took her serious. It took me almost a year to get the weight off, but it worked. I opted for some pretty unhealthy styles to start with because that is where my head was and the reason it took me a year to get it off, but I began to feel satisfied and not deprived and so as I went I began to par down the kinds of soup I made or I should say the kinds of ingredients I used. When I did put meats in the soup it was very trimmed of fats, skinless and skimmed when done. When I did want a cream soup I made the soup and added a tablespoon or two of cream into my 'own' bowl as did the rest of my family. Also, when creamed soup was made as in cauliflower, broccoli, etc, I pureed the vegies and added some cheese. Vegan cheese is great for creamed soups. I am still eating soup as it keeps me focused, thin and healthy.
I thought my family would complain, but even now (they're grown with kids) they eat soup. Next to chocolate, I think soup is a miracle food.

just fresh veggies and tofu flash cooked in hot broth :)

I start by boiling dry soup mix that contains barley, rice, lentils, split peas and beans in 12 cups of water with a soup bone for 1 hour or so. Then I add cubbed carrots and turnips. Simmer for another 30 minutes. Then I add 1 cubed potato, leaks, rapini, and some Orzo pasta. Simmer for another 30 minutes,,, You can add 1 small can of V8 for taste. VOILA!

I absolutely love soups. This is the perfect time of the year for it. I have made pea soup, lima bean soup, minestroni, chili, pumpkin soups. I was vegetarian for 2.5 years so most of my protein was coming from beans. I love to cook and follow your posts regularly. I hope to publish a cookbook soon.
