Once Jack Frost kisses the garden, the leeks are in their prime, and the first order of the day is to make leek and potato soup. Nothing can quite compare to this celebration of the Autumnal Equinox: Leek and Potato Soup with a chunk of hearty home-made bread, followed by a generous serving of apple crisp (don't forget to toast the almonds or walnuts to include in the topping) dolloped atop with thick Jersey Cream and a knob! of Cabot's best sharp cheddar cheese. Now, for goodness' sake, go for a brisk walk to get it all streaming through your veins, come home and take a 15-minute nap in the hammock! There, NOW you're ready for winter!! ...Sally Wall, Derby, Vermont

These soups are similar to a basic soup recipe I've been using. So, in addition to the vegetables mentioned you can also use cauliflower (good with a little curry!). And I prefer to use a little greek yogurt instead of half and half. These soups are an almost daily lunch for my family. (I have a few others which we like.)
