For topping French Toast or any kind of pancake (and I LOVE Eating Well's pancakes), I always use cook fresh blueberries and any other berry up with a dash of either honey or real maple syrup with a dash of cinnamon. So fresh tasting and satisfying!

Vanilla, cinnamon, orange zest and a bit of fresh orange juice, 1 egg, and almond milk for the bread dip. I use a whole wheat french baguette. Fresh blueberry compote and dusting of powdered sugar on top. Olive oil in the cast iron pan lends an earthy flavor, but be careful not to burn.

I use my favorite egg substitute,lowfat milk,cinnamon,vanilla extract,orange zest and my family loves it!

What?! The best ever French Toast, which I am internationally famous for, is made with baguette slices dipped in egg, milk, cinnamon and vanilla. Then grilled in a touch of butter, pressing down on the slices with a spatula, to make them crispy. Always served with cooked blueberries or other fruit, and real maple syrup. Oh so good!
