Recipes that halve the dinner rush hour

Wendy asks: What creative solutions have you found to make dinner in 30 minutes or less?


Unfortunately, I am not a quick cook! I do find fish to be quick, with some sort of steamed vegetable and another side. Ditton for various chicken sautees.

I rely on some (homemade) meals in the freezer to help. For example, when I make meat sauce, I make enough for approx. 7 meals. I also make brown rice or Three Grain Pilaf in big batches and freeze the extra in meal-sized portions. Jambalaya, as well as many soups and stews freeze and reheat successfully. We love the EW Asian Turkey Burgers, so I mix up a triple batch and freeze the extra burgers.
