I put my heart and soul into cooking the Thanksgiving meal, and in the days afterward the last place I want to be is in the kitchen. I know I’ll still have to eat, but I’m going to give myself a break with some easy, ultra-quick dinner recipes. These recipes take only 20 minutes from start to finish and use ingredients that I almost always have, like bread, eggs and tuna fish. (I just might need to make a quick trip to the grocery store for some vegetables.) Dinner doesn’t get much easier than that.
Here are some of my favorite easy post-holiday dinner recipes:
Tuna Melt In this updated version of the tuna melt, we go light on the mayo and top it with fresh tomato slices and shredded sharp Cheddar, which allows us to use considerably less cheese while ensuring that there’s great cheese flavor in each gooey bite.
Italian Vegetable Hogies This delightfully easy, and somewhat messy, sandwich packs a punch with sweet balsamic vinegar, artichoke hearts, red onion, provolone cheese and zesty pepperoncini. We love it for dinner as well as lunch. If you’re packing the hoagies to take along, keep the ingredients separate and assemble right before eating to avoid soggy bread. Serve with tomato and cucumber salad.
Artichoke & Ripe Olive Tuna Salad An unusual and rich flavor combination; serve this salad with sliced tomato on a bed of lettuce or on French bread.
Barbecued Chicken Burritos These burritos are something of a Tex-Mex wonder: tangy barbecue sauce, some roast chicken (or rotisserie chicken) and vegetables, all wrapped up in tortillas. For the best taste, look for a fiery barbecue sauce without added corn syrup.
Moo Shu Vegetables This vegetarian version of the classic Chinese stir-fry, Moo Shu, uses already-shredded vegetables to cut down on the prep time. Serve with warm whole-wheat tortillas, Asian hot sauce and extra hoisin if desired.
