Potluck winners! Healthy, delicious and cheap casseroles to bring to your next party

Jessie asks: What kind of casseroles do you like to make?

Jessie, I cook dinner for my family (siblings, aunt, uncle,mother) every Thursday and am really enjoying searching for the perfect meal. Naturally, everyone doesn't like some: only chicken breasts, only chicken thighs, no pork, never shellfish, no fish and no vegetarian food. To top it all off, my mother cannot chew very well with her dentures. They are more accustomed to comfort food like fried chops and potatoes that use very few spices or herbs. I am the "black sheep" of the family; the one who's come back from the West to take care of mom and uses all kinds of seasonings.
Casseroles seem to be the way to go, so I'd like to get a few more that use diced meats (beef or pork) and ground beef with more creativity than hamburger helper.
