Usually a salad with some pre cooked chicken strips I buy from the supermarket. Or I take those chiken strips and microwave them, throw some rice and water into my rice cooker and then I mix them together. Little to no effort.

i take leftovers out of the freezer and reheat them.

I poach an egg in some chicken broth and throw in some greens like escarole, spinach or chard for a quick soup with protein and vitamins.
