Mother’s Day is just around the corner. I like to show my mom how much she means to me by helping her have the most chill and relaxing day possible. She loves to sleep in—or really, she likes to lie in bed until late morning reading a book, possibly with our dog curled up next to her. Luckily, she’s happy to be coaxed out of bed by a delicious brunch.
I like to make Mom an amazing brunch at home, instead of going out. Having a full spread of delicious homemade brunch recipes feels like a splurge, but costs less and is yummier than what we’d get if we went out to a crowded restaurant. This menu of brunch dishes is super-easy to make, plus many can be prepared in advance so I can have a relaxing morning as well.
Baked Apple-Cinnamon French Toast—French toast is like having an indulgent dessert for breakfast, but with this recipe you can enjoy it guilt-free. By using nonfat instead of whole milk and eliminating the egg yolks, the calories are cut by half and the fat is reduced by nearly 80 percent in our baked (not griddled) version. Best of all, the whole thing can be prepared up to a day in advance and then simply popped in the oven the following morning.
Chicken-Apple Sausage—It’s easy to make your own patty sausage with just a few healthy ingredients like ground chicken, apples, onion and savory spices, such as sage and fennel. You can use ground turkey instead of ground chicken if you prefer. You can even make the patties now and freeze them for your Mother’s Day brunch!
Blueberry Ginger Bellini—I feel that cocktails are an integral part of going out for brunch, so I always plan them when I’m making brunch at home. You can use an inexpensive sparkling wine since you’re mixing in blueberries and ginger.
Raspberry-Swirl Cupcakes—I love to make cupcakes for dessert when I’m entertaining because there’s no messy cutting and guests can grab one when they’re ready for dessert. These raspberry-lemon cupcakes are topped with an easy cream cheese frosting tinted pink with a little raspberry puree. Don’t like cupcakes? Try one of the other delicious recipes in our cake collection, like Pineapple-Coconut Layer Cake, Chocolate Truffle Cheesecake and more.
