I love the idea of Meatless Mondays, and if you choose the right recipes, or simply get creative on your own, you can show people that meat-free meals absolutely do not have to be flavorless. Even vegan meals, when packed with spices and fresh herbs, can surpass meat-filled meals in flavor. It's all about the quality of the ingredients you use and the way that you pair them. Today I did a simple combination of aduki beans and bulgur wheat, packed with taste without the need for any meat. A little cheese added on top if you're not vegan can also add another punch of flavor.
I have been vegetarian for about 5 years now. I love to cook Indian and Thai because I love their spices and there are lots of vegetarian options. I also love Italian and Greek food.

Our family of 6 eats meatless breakfasts and lunches several times a week. That's pretty easy. Dinners are another story. We eat meatless dinners about once every week & a half - that's usually pasta or pizza. I'm looking to add one more meatless night to our regular meal plans to bring us up to once a week, as long as I can find tasty, yet budget-friendly foods that the kids will eat.
