How to make cream sauce without cream

I think I could do better than that, I mean cream and wine; though delicious, it's been done. The rice idea doesn't sound very tasty at all. On the other hand, coconut milk is soooo healthy and really doesn't taste like coconut. It's creamy and smooth and versatile. I love to mix it with my low sugar orange juice for even less sugar. It tastes like a "dreamsicle", (you know those frozen treats). It's also very good in smoothies. Why not a savory sauce? hmmmm...
