Cooking is a bit like witchcraft - I don't know what to put in the cauldron and don't understand why it doesn't work out. Added to which, people just eat the result (however reluctantly) and then you have to do it all again. Argh.

The PCC Deli makes so many healthy and delicious dishes that, when I am busy, I often choose to eat meals from there rather than buy, wash and cook things.

The Ooey-Gooey Black Bean Quesadilla was a HIT at our house! Yes, it is possible to make dinner in only 15 minutes!

By default, I am the cook & Dad in the family. My wife spends too many long hours in corporate America, and leaves the meal planning (and implementation) to me. After reading about the Eating Well challenge on a trans-Atlantic flight to Copenhagen, I promised myself to give 50 recipes a try. The Julie & Julia movie was an inspiration to get out my cooking shell, and try new things that my teenager will actually eat.

Paging through the Eating Well August 2010 magazine, very single picture invited me to give something new a try. I have had no formal cooking classes or training, so cooking 50 Eating Well recipes is a definite challenge. The kitchen is a foreign object to me. But, I have Buster, our beloved West Highland White terrier at my feet while I cook meals.. The benefit is what hits the kitchen floor, Buster eats!

My teenage daughter, unwillingly helped me make a Five Day Meal Plan, write down the ingredients we need, and shop at the local grocery store. This beginning was a huge hit as it cleverly involved my "un-interested” teen. After the DAY ONE Blake Bean Quesadillas dinner, she has become my taste-tester...and is fast replacing Buster the dog.

To date we have tried:
Tomato & Provolone (pg. 58)
Chicken Nuggets with Blackberry Mustard (pg. 25)
World Famous Black Bean Quesadillas (pg. 22)

So the Cooking Dad is on his way! Three down 47 to go.
