Breana asks: What was your favorite recipe from Week 1?

I am on a special diet due IBS, gluten and lactose intolerant. I have come to the conclusion to totally cut out GF oatmeal, breads, pastas...those types of carbs for two week to see if there is any change in my BM's, stomach cramps and fatigue. However, I am looking for alternatives to those carbs. Any ideas?
