Veggie-Packed Sub Sandwiches
Slice a whole grain baguette in half lengthwise, the scoop out the center of both halves with your fingers to make more room for filling (Note: save the removed bread for breadcrumbs in another dish).
Layer in whatever meat and/or cheese combination you like.
Next, load it up with lettuce, thin-sliced red onion, cucumbers sliced lengthwise, tomatoes, roasted red peppers, pepperoncini...
Dress the veggies lightly with a dressing of your choice (I used a smoked tomato and garlic).
