any kind of omelet and a really good salad...it is amazing

The other day I made a feast...it consisted of an english muffin topped with a slice of ham, asparagus and hollandase sauce that I made from a package mix. It was absolutely de li ci ous! Yum. I also like waffles and fruit on warm summer nights for dinner.

Shirly's Egg Puff
10 eggs beaten
1 16 oz. carton cottage cheese
1- 4 oz. green chiles
1 lb. jack cheese grated
1/2 cup floour
1/2 tsp. baking powder
1/2 tsp. salt
Combine. place in 9x13 pan. Bake 35 min. or until knife comes clean at 350 degrees.

I like omelet with broccoli,cauliflower and red bell pepper.I blanch slightly broccoli and cauliflower florets.Then heat oil in a skillet over medium hit,add red bell pepper strips stirring,until softened,add broccoli and cauliflower,stir to combine,salt and black pepper.Poor over the vegetables eggs,mixed with little bit of milk and salt.Cover the skillet,lower the hit.In 10 min it is ready to serve!
Sometimes I add red pepper flakes for some hit!!!

I love breakfast anytime. If I do make breakfast for dinner it is usually some kind of french toast bake, something I can make earlier in the day and let set up in the fridge until dinner time, then just pop it in the oven. My family's favorite is a "creme bruelee" french toast bake even though it isn't the healthiest, it sure is tasty!
