I am a big user of Kale. Great superfood I believe! It is abundant in Phytochemicals, substances associated with the prevention of cancer, diabetes, cardiovascular disease, & hypertension. These a 4 of the leading causes of death in western countries. It also contains 45 different flavanoids which provide antioxidants & anti-inflammatory benifits. These are just a few of the benifits that kale has. So one to add to your diet I believe. Get more info at

Great post! I've steered away from pomegranate since it can be tough to get those seeds out. When I was a kid in the South - we were fine with picking the seeds out one at a time. We even made a sport of it and let our mom worry about the stains on our shirts. HOWEVER - I heard of a trick recently in which you cut it in half and slam it on the counter to pop the seeds out. I have yet to try it but I think this little tidbit may just help me overcome my fear of bringing a pomegranate home from the grocery!

Sardines - hmmm - got a can of those in my cupboard - bought specifically for their nutritional benefits. Haven't worked up the courage to venture there yet.

Collard greens. $.69/bunch at my local Kroger. I use them raw in a marinated chopped salad, stir-fried with a little curry powder and tofu, or cooked the traditional way seasoned with turkey instead of bacon fat. I buy one or two bunches/week. I also sub them in any recipe calling for kale.

I'm a huge fan of Sardines!! Easy, and quick to make goes with sooo much! On top of pasta .salads, side dishes, so much!! I swear, I have close to about 15 cans in my copbuard right now lol! My favorite so far are the boneless in olive oil, and my ever so thoughtful Mom sent me a case of the ones in spicy tomato sauce.Haven't tried the smoked variety, but I'm game;-)!!

Thanks for reminding me. I would join my dad in the eveinng at the kitchen table for a snack and he would open a can of sardines and a box of crackers, boy we would have a good time and it was the best of times. I later Incorporated sardines on top of a fresh salad and bamb!!! a whole complete nutritional lunch.
