While crispy bacon may have less fat, it is also higher in nitrites, softer bacon is better for you in the long run, a little extra fat is preferable to compounds such as nitrites.

I have an iron skilled with ridges...the bacon fat drains into the channels...however I use the drippings to make potato soup and eat the bacon for breakfast.

I hope most people are aware there is the option to buy all-natural nitrite-free bacon. Hormel sells this kind as well as other brands. Look for it at Whole Foods, Mothers, even Ralphs. Ralphs recently had a sale for Hormel nitrite-free unprocessed bacon $2.99 each as opposed to $7.99. It's worth the extra change for your health, which is priceless!!
