6 Practically Instant Red, White & Blue July 4th Recipes

When the Fourth of July comes around, I tend to go a little overboard with the red, white and blue theme. I’m not talking about sparklers and little American flags everywhere. I like to roll out my favorite red, white and blue recipes. Lots of red, white and blue recipes get their patriotic look from synthetic food coloring. But I prefer to get creative with naturally vibrant ingredients like red raspberries, red tomato salsa, red peppers, blueberries and blue potatoes to put color in my dishes. Here are 6 irresistibly cute, super-easy recipes I worked on with the cooks in the EatingWell Test Kitchen to help you put some red, white and blue foods on your July 4th party table this year.

1. Mini Berry Cream Pies (pictured above)

If you want to pull off a fast dessert, you’ve got to embrace convenience products. One of my favorite dessert helpers is mini phyllo shells. They come in shelf-stable or frozen varieties. I prefer the frozen ones—they have better flavor and texture. The best part about putting anything in a mini phyllo shell is that it looks like you slaved for hours over your little creations, when in fact it’s just the opposite. EatingWell’s new recipe for mini berry cream pies is so quick. You make the filling by mixing together lightened-up cream and nonfat vanilla Greek yogurt, spoon it into the prepared phyllo cups and then top it all with a cute little raspberry and blueberry. And don’t throw away the plastic tray the shells come in! It’s a great way to transport them from place to place.

Nothing screams “Fourth of July!” like a flag cake, and this one is no exception. EatingWell’s recipe for healthier flag cake is easy to pull together, and unlike many recipe that call for food coloring and frosting, you rely on berries and a lightened-up cream cheese frosting to make it patriotic and pretty. Don't have time to bake a cake? The concept is flexible. Use a premade cake or cupcakes instead and add the berries in a mini-flag pattern or whatever else suits your fancy.

Are chips and salsa patriotic? They are when you pair fresh red salsa with blue corn tortilla chips and a sprinkling of crumbly white cheese on top! This recipe is perfect for a last-minute July 4th appetizer. It’s incredibly easy and quick to pull together, yet fun and festive. Make a dozen or so at a time, and be sure to drain any excess water from the salsa so it doesn’t sog up the chip. Cotija cheese is a hard, salty Mexican cheese that crumbles well. If you can't find cotija, use Parmesan or feta instead.

A good potato salad is a staple at any picnic or potluck. And if you’re picnicking on July 4th, then why not make your potato salad red, white and blue? Blue (or even purple) baby potatoes are cooked along with white baby potatoes. Then they get tossed in a lemony vinaigrette with a few fresh herbs and lots of chopped roasted red peppers for bold red color and flavor. This potato salad recipe is great to make ahead: just cook your potatoes and make your dressing and hold them separately until you’re ready to serve.

This sweet treat is great for kids or adults at a Fourth of July party. It’s got only 3 ingredients and I love the way the tart limeade mixes with the sweet frozen berries. Don’t like limeade? Lemonade works well, too, and feel free to take some creative liberties with the fruit you use to represent your “stars and stripes.” Chopped cherries, strawberries and blackberries would work well too. Just make sure you plan ahead—the pops take about 6 hours to freeze. If you have star-shaped popsicle molds, use them; otherwise, regular popsicle molds will work.

An ice cream float is the perfect summer treat, so why not give it a colorful lift by turning it into a red, white and blue treat? This float uses low-fat vanilla frozen yogurt for the “white” and relies on bright-red pomegranate juice studded with blueberries for the red and blue. The recipe only serves one, but you can easily double or even triple the recipe. Just be sure to serve it right away!
