This was a great weeknight dinner -- quick and easy, and great fodder for leftover lunches. I added a bit of spice to give it a little more punch -- probably 3/4 teaspoon cajun mix, a pinch of red pepper flakes and 1 tsp Old Bay, just before pouring in the chicken broth. A few extra veggies would be nice -- I ended up chopping my own peppers and onions, so would shoot to include 3 or 4 peppers, some chopped tomatoes, and even 1 tsp of tomato paste next time around.
