I use pepper jack cheese, rye bread and add roasted red peppers and jalapenos :-)

I love to use grainy breads, spread a thin layer of cream cheese, sundried tomato and a slice of pepperjack. YUM!

To me, a good grilled cheese is all about simplicity. I don't want meat, or vegetables, or anything other than a good cheese and a good bread.

I put a thin layer of hummus on the bread, then a nice thick slice of tomato and then cheese, super yummy. Avocado is also a nice addition.
