My favorite is either orange or lemon shrimp from "A Year of Slow Cooking". It doesn't take all day, just a few hours and uses ingredients I usually have at home.

I use my slow cooker all year, usually 2-3 a week. A lot of the time I just slow cook a whole chicken, turns out tender and moist every time. Another family favorite is cranberry-pineapple pork roast, a different twist on the usual pork roast taste. I also sometimes make an easy dessert in my slow cooker even though it isn't the healthiest but is great to have a hot dessert on a cold winters night.

Coffe braised pot roast - My husband usually cooks & is apprehensive when I tell him that I'm going to cook dinner! BOTH of us loved this dish - he couldn't tell that there was coffee & vinegar in it. I'm going to try it with pork, too. Thanks for a great recipe!

EVERYTHING!! I put in a whole chicken or a roast(complete w/ potatoes and carrots). My favorite is stew. I lightly brown some stew meat and add LOTS of spice. Then I layer potatoes, carrots, onions, peppers, whatever in the crock-pot, add the partialy cooked meat and cover the entire thing with a large can of V-8 (I prefer low-sodium). Cover it and leave for the day. The acid in the tomato juice slows the cooking for the potatoes and carrots so give it plenty of time. It's a wonderful and welcome smell when I walk in the door at night!

My favorite is to use the Leftover Easter Ham bone nestled in 1 pound of navy or Great Northern beans along with chopped yellow onions, chopped celery leaves (the part you would normally cut off and throw away), cracked pepper corns, minced garlic and water within one inch of the top of the crock pot.

After I have soaked the beans overnight, drained and discarded the water, I place all ingredients in the crock pot, turn it to low and let it slow cook for 6 to 8 hours (half that time for the high setting).

I have tried using the smoked pork knuckles that one can purchase in the supermarket, but the soup just doesn't turn out as well as using the leftover Easter Ham bone.

In fact, I am soaking the beans right now, to slow cook tomorrow....I can hardly wait.
