This year, my husband and I are having Easter at our house. With parents six hours away by car, we're cooking our first official holiday meal as newlyweds with just a few relatives joining us at the table.
Here's our menu: ham with spicy horseradish mustard, glazed carrots with rosemary, green beans and potatoes au gratin. Of course, as is usually the case with Easter ham, we'll have more than we, plus a couple relatives, can eat-even after all the bites of ham we'll sneak to our puppy Lou under the table!
Here are 5 delicious ham recipes-for soups, salads and eggs with ham, of course- that I'm going to make with all my leftover Easter ham.
Green Eggs & Ham Frittata: Forget Sam I Am, I do like my eggs with ham. To me, ham's salty, smoky qualities are the perfect match for soft, buttery eggs. While you could just put chopped ham into your omelet, why not go all out, Dr. Seuss style, and make our Green Eggs & Ham Frittata, which combines ham and spinach in a cheesy frittata with fresh dill. It makes an easy brunch dish with roasted potatoes or a salad.

Soup Beans: Ham adds a nice smoky, porky flavor to beans, and in most cases it is as easy as adding the ham with your onions and other aromatic vegetables. In our Soup Beans you simply add diced, leftover ham to a Dutch oven along with the rest of the ingredients to simmer away for a couple of hours. A side of cornbread and some diced red onion complete this simple dinner.

Ham & Swiss Rosti: Rosti is basically an oversized potato pancake with Swiss origins. We have made it even better-and also turned it into dinner in under 30 minutes-by adding diced ham, shredded Jarlsberg cheese and rosemary. It is great with steamed asparagus and low-fat applesauce or with a simple green salad.

Ham & Cheese Breakfast Casserole: If you're feeding a crowd, try our Ham & Cheese Breakfast Casserole. This makeover of a traditional Italian strata cuts calories and fat by omitting a few egg yolks and relying on nonfat milk. Plus, whole-grain bread delivers a fiber boost. Even better, you can assemble the casserole the night before you want to eat it.

Broccoli, Ham & Pasta Salad: One of the best things about ham is that it is as good hot as it is room temperature and cold. So, it is a great and super-easy add-in to salads, including our Broccoli, Ham & Pasta Salad, a perfect spring picnic dish that is packed with fiber-rich broccoli, healthy whole-grain pasta and vitamin-C-rich red bell peppers in a creamy, low-fat dressing.
