No-cook vegetarian recipes are welcome during the hot summer months. Beans and rice with guacamole and salsa served with warm corn tortillas is one of my favorites. A four-bean salad with red kidney beans, chickpeas, green beans, and black beans tossed in a shallot and dijon mustard-honey vinaigrette is another favorite. I've eaten that as a taco filling and a salad on top of romaine or butter lettuce.

I LIKE THE MIDDLEASTERN HUMUS AND BABAGANOUJ AND TABOULI OR SALAD WITH LEMON GARLIC AND EVOLIVE OIL AND I WOULD LIKE TO ADD TO IT A SIMPLE BUT TASTY LENTIL AND RICE DISH IF I MAY PLEASE ADVISE ME WHERE I SHOULD ENTER THE RECPIE FOR VEGTARIAN EATERS THANKS ,RUTH STAGNITTA

Falafel and Pita Bread are great for Summer. Veggie patch Falafel is great with Cucumbers and tomatoes. Can try with Humus and also Peach Mango Salsa is a great alternative. Throw in some Chillies if you like it hot!
