Coconut milk. I'd like to use it more, but not sure about the higher sat fats and calories. It can form fairly big crystals, but if you add toasted coconut and bittersweet chocolate chips, no one notices. But again, high sf & c.

Always try to buy and use the highest quality ingredients you can buy and afford. Things like pure vanilla extract, good quality chocolate, ripe in season fruit, etc., make a huge impact. It doesn't a huge amount of great quality ingredients to give you rich tasting batch of ice cream.
