Nicci asks: What is your favorite healthy breakfast?

I'm not sure if I can really get on board with the eating breakfast thing. The coffee, definitely. But I was trying to eat breakfast this week to give it a try. Other than my coffee, I ate a bowl of oatmeal. Definitely great for these cold winter mornings but unlike most days, I can usually go without eating a thing until 4pm. Just give me gum every so often. But this week, I would eat oatmeal around 8:30am and would be starving by 11am. Tried to snack on peanut butter or a granola bar but that just intensified my hunger cravings. Then by 4pm, I was really craving food. I think I gained 3 pounds this week.

Lily - my 8 yr old - is the same way. She's not a breakfast person She'll drink milk or OJ but that's really if I force it on her. She prefers an earlier lunch - 11am, snack around 4pm and dinner definitely around 6:30pm.

I'm going off the breakfast kick this next week because I need to lose the pounds gained this past week. I ended the week eating pot stickers and chocolate peanut butter pie for dinner tonight. ugh. yum, but ugh.

Well a good breakfast for me would be an egg white omelet with vegetables and cheddar. Maybe a fruit salad on the side.?

Scrambled Spanish Omelette, Apple or any fruit and a short black coffee with low fat milk.

It is a terrible fight to eat breakfast. Being very allergic to dairy, wheat, and citrus means no cereal, milk, and OJ. Type 2 diabetic too.

Yogurt in warm weather, or home made soup in the winter.
Smoothie-low carb with a little spinach too.
Thomas "everything" thin bagel toasted with Trader Joe's crunchy almond butter and flax any time of the year!
Home made soy yogurt with freezer strawberry (Splenda) jam
Fruit cup and goat mozz cheese
Crock Pot oatmeal with Splenda and 8th Continent light soy milk
Lentil soup maybe with meat and maybe not

A spinach, mushroom and tomato frittata. It is healthy, quick and easy!

I like to toast a half a sourdough English muffin and top it with an ounce (or less) of reduced fat cheddar, then pop it in the microwave for 20 seconds. Paired with a cup of dark coffee (we just bought a new grinder and we're in heaven, LOL) and a tablespoon of coffee cream, it really is my favourite. It's yummy, plus I find having some protein at breakfast really helps keep me full. I never snack in the morning! I try to vary my morning meal around (scrambled egg on toasted rye with a half grapefruit, oatmeal with apples), but this is my all-time favourite, I think because I don't eat a lot of other cheese.

I like cheese toast.. of course I love cheese! And then I do like scrambled eggs,
and toast.. and a little bit of sugar-free preserves/jam... nice.

I have to watch my sugar intake, so I stick with a small orange... or some
blueberries, instead of juice...

I love my whole wheat english muffin with an egg, sliced tomato and a piece of low fat swiss cheese. That is typically my breakfast each morning.
I also enjoy taking a couple slices of wheat bread again putting sliced tomatoes and then a piece of low fat swiss chess place under the broiler until the chesse bubbles...Yum.
This morning being Sunday I made buckwheat pancakes with blueberries another healthy meal.
