SOUP! It's got to be the most versatile meal. Having moderately high cholesterol I created a vegan soup with cholesterol lowering, fiber rich, heart healthy ingredients. These include: low sodium veggie broth, lots of kale,plus carrots, celery, garlic, Bob's Red Mill Soup Mix, more lentils, green beans, navy beans, 1 can no salt added tomatoes, curry, turmeric, black and cayenne pepper. Low cal and very nutritious. It makes a huge batch and freezes well. When I reheat it in the microwave, I add mushrooms and any left over veggies (usually broccoli). I eat a bowl of this everyday for lunch. Keeps me satisfied until dinner and I never grow tired of it.
