I cook on the weekends and make really quick meals during the week. This week I made a few recipes from the Jan/Feb issue- Brothy Chinese Noodles and the Pork Stew. For a 500-cal dinner, I love the braised paprika chicken.

I love salmon; it is not in my price range. I eat a lot of chicken and lean beef. I buy food on sale; cook in quantities and divide it up and freeze it in marked and dated containers. When I am too tired to cook and hungy; I grab something prepared from my freezer and microwave it. Cooking once per month or once per week, saves time and energy (especially, my electricity bill). I was blessed with a wonderful neighbor who went thorough the Great Depression who showed me how to stretch a dollar and save money for a "rainy day". You were blessed; if, you knew her.
