Consider milk, look up how it is homogeneous and all the added
hormones can affect your body in a terrible way. It can also lacerate
your bodily tissue, in which cholesterol is used to repair it, and added
build-up will cause numerous problems.

I would suggest a little more research into your statement "Most experts agree that saturated fats raise levels of LDL ("bad") cholesterol in the blood, which can damage the heart and arteries."

Not all saturated fats are evil, in fact it is not the fat at all, it is the processing and it is the source. Natuarally processed fats from health sources will lower LDL and actually raise HDL. Check the source of your experts next time and see how many of them are attached to the multi-billion dollar soybean industry.

OK, what you're doing for a week is what I've been doing for Lent. It is actually very easy. Added that I only eat some fish and egg, otherwise vegetarian - and am lactose intolerant - then the choices narrow more.
I wish you luck in your changes - the first 4 days of change are always the hardest, and the first week of changing a normal eating routine if you want to make longer term changes. But then it gets easier and easier - heck, I even go to birthday parties and gatherings and say no to the cake, desserts, snacks, etc. Just have the fruit and veg, and no hassle, no feelings of deprivation or anything.
If you want it, it will happen. If you approach it positively, it will flow. If you look at it as deprivation, hard work and suffering ... well, your success might be harder or more limited. Attitude is everything.

Why go back to a less restrictive diet? Why not adopt these changes as permanent? You aren't giving up anything good here. These are all changes towards a HEALTHIER life style....why put them back in your mouth/body??

If I set out a line of cocaine on a plate, you'd go screaming into the night. If I set out a line of white sugar, you wouldn't bat an eye, probably declare that if it's used in moderation, it's not so bad. Problem is, it seldom stays in moderation any more that the first moderate use of cocaine. Both white powders go straight to the pleasure center of our brains and set up a craving for more.
HOWEVER pure, raw, unheated cane sugar and honey are God-given sweets with vitamins and minerals in them. Amazing huh? Rapadura is the sugar you want to put in your cubboards....and stevia and agave moderation.
