My secret is COLOR!! Red, yellow, green, orange... The foundation starts with lettuce or spinach--romaine, red-leaf, arugula, mixed greens (mesclun). Then the fun begins--red, yellow, and orange bell peppers, carrots, tomatoes--yellow & orange cherry varieties are also available now, yellow & green squash, purple cabbage, jicama, purple onion, green onion, broccoli, cauliflower, the list of veggies is endless. It all depends on what you like. I do not mix my fruit with my veggies, I prefer to eat them separately since veggies are blood builders and fruit are blood cleansers. But a mean fruit salad can be made from the endless colors of fruit that can be tossed together. The possibilities are ENDLESS!! And especially if you go ORGANIC & LOCAL!!! Let your imagination go wild.

Romaine lettuce, LOTS of different colors, and my homemade ranch dressing (greek yogurt, chives, garlic) topped with black beans, sunflower seeds, and avocado. SO good!

I love salad as well. I use 2 cups of spinich, A whole tomato a yellow pepper about half a cup of mixed lentils and mixed black beans, I chop a little low fat cheese into cubes, and 1 garlic clove. Dressing is 1 Tbsp of extra virgin olive oil, and 1 Tbsp of apple cider vinegar.
Delicious and so nutritious and so full of fiber!

Organic everything...1/4 c.flat-leafed Italian Parsley,chopped, yellow bell pepper, baby field greens, chopped romaine, english cucumber(skins left on), celery, halved grape tomatoes, radishes, 1/4 c. chopped scallions, broccoli tops in bits, fresh blueberries, 1/2 sliced avocado, walnuts, topped with an avocado/ranch dressing and lots of fresh ground black pepper. This is my fav. salad combo when I need veggies. I eat a whole plate full for a meal with wholegrain baked bread and cheddar cheese on the side.

I think 1 fruit 1 nut and 1 cheese makes every salad complete amongst other things....I enjoy strawberries, almonds and a little shredded organic antibiotic/hormone free cheese. Don't forget a little chopped avocado! :)

Variety of veggies, broiled chicken, low fat feta cheese tossed with a garlic, black olives, dill weed, salt, pepper, and wine and apple cider vinegar stirred together, then poured over the salad...I have this several times a week...oh, for the "olive oil taste", I also spritz the salad with pam olive oil spray and toss some more. This salad is amazing--it's large, filling and low calorie/low fat. It's also great with a handful of whole wheat cooked pasta thrown in.

what type of ingredients do you add to your apple cider vinegar dressing? the last time I made it, it was way too vinegary

Spinach, avocado, protein (chicken, fish, beans or nuts) and a light olive oil & apple cider vinegar dressing! YUM!
