When I told my husband, Dan, that I was blogging about Rocky Road Brownies (find the recipe below), he turned to me and said, “The Rocky Road Brownies? That was the best dessert you ever brought home from EatingWell.” He might be right. Although every recipe that chocolate expert Alice Medrich developed for the latest issue of EatingWell is truly amazing, it’s quite possible that these Rocky Road Brownies were the Test Kitchen’s favorite. Are you one of the millions of Americans who cited losing weight as one of their New Year’s resolutions? I hope you haven’t given up yet. One of the 2011 resolutions my husband and I made is to eat more healthfully (and by default, lose weight). Like most people, Dan and I are busy and find it hard enough to fit in exercise every day, let alone get a healthy meal on the table.

Believe me, I understand that there are a million excuses to get out of making dinner. I’ve got a million of them myself. Just last week I had a frustrating day of work, and it was my responsibility to make dinner since my husband, Dan, came home from work and walked the dog. When I whined that I didn’t want to make dinner as he sashayed out the door, he said, “Fine, order a pizza then.” Mmmm, pizza.

While we were out walking the dog last weekend, my husband, Dan, asked what my New Year’s resolutions were. Huh. Quite honestly, I hadn’t really thought about it! I feel like every year I make the same-old, same-old resolutions that I never keep (i.e., lose 20 pounds so I can wear my super-awesome Calvin Klein jeans again). Why set myself up to fail yet again?
