My husband had been doing more of the grocery shopping lately. While he loves fresh fruits and vegetables, let’s just say that occasionally he buys some produce that is past its prime. I’d rather he not spend money on produce that’s headed straight for the compost bin. (Find delicious dinner recipes for $3 or less in our Budget Recipe Collection.) There are a few fruits and vegetables we like to always have on hand for super-delicious dinners—broccoli, carrots, dark leafy greens, mangos and salad greens—so I typed up a few quick tips he can keep in his wallet for when he goes to the grocery store. My husband and I have what I like to call “brinner” a few times a month. What is brinner, you may ask? For the uninitiated, brinner is breakfast for dinner. Brinner is what breakfast-lovers figured out long ago: with all the awesome breakfast recipes out there, like frittatas, pancakes and waffles, why only make them for breakfast? Who has time to make waffles on a Wednesday morning anyway? But Wednesday night? Wednesday night is a different story…

We have pasta night once a week (at least) at my house. There are lots of reasons why pasta makes it on our weekly dinner rotation—perhaps the best reason is that it’s fast. While I do love to cook, I have a 30-minute rule during the week: if a recipe won’t be ready in 30 minutes, I won’t make it! I save longer, more complicated recipes for the weekend, when I have more time to enjoy the process. The other reason I love pasta is its versatility. It’s a great way to enjoy traditional Italian sauces, but pasta also shines in Asian dishes, with untraditional toppings and more.

My husband and I spent 10 days in Italy this past fall. And even though I felt like we were constantly eating and drinking, neither of us gained any weight and we both felt great. That’s because we were living the Mediterranean lifestyle to its fullest extent—we were doing plenty of walking, we were eating a variety of healthy, whole foods and delicious Mediterranean meals—in reasonable portions, of course—and we weren’t stressed out!

My husband and I are members of a year-round CSA (community-supported agriculture, with shares for members). In Vermont. That might leave you scratching your head, wondering what the heck we’re getting from a farm in Vermont in the middle of winter, but it’s a pretty sweet deal. The farmers store a lot of root vegetables and winter squash, plus they put up lots of goodies in the summer for the winter share. Just last week we got homemade pesto and frozen tomatoes—a little taste of summer on a cold winter day!
