If you’re like many women, I’m going to venture a guess that you fall off the healthy-eating bandwagon once every, say, 28 days, give or take a few. Am I right? You know what I mean. PMS cravings. Even my super-clean-eating friend told me, “I’m not big on food cravings, but that’s the only way I know that I’m PMS-ing.” Ain’t that the truth. As I write this blog, I’m working my way through a bowl of spicy baked cheese puffs and waiting for Aunt Flo’s monthly visit.
So what’s a girl to do when she wants to “be good,” but every hormone and emotion in her body is screaming, “BE BAD! BE VERY BAD! EAT THAT!”?

My cousin lives in New Orleans and just about every year my husband, Dan, and I talk about heading down there for Mardi Gras. For some reason we can’t seem to get it together enough to actually make it happen. But we still like to celebrate, so we invite a few friends over for a no-fuss Fat Tuesday celebration.
Since Fat Tuesday always falls on a weeknight (duh), I like to whip up a batch of this Sausage Gumbo for the festivities. It’s much healthier and easier to make than a traditional gumbo, which takes hours of cooking plus involves making a black roux that’s loaded with saturated fat (and needs careful attention). One recipe I found had 480 calories and 40 grams of total fat per serving—eep!

Risotto done right is absolutely sublime: rich and luxurious with just a touch of toothsomeness. Risotto, an ultra-creamy rice dish, is made by slowly combining hot broth with arborio (or other “risotto-style”) rice. Despite its reputation for being fussy or time-intensive, risotto is actually quite simple to make. While you do need to attend to the pot while you’re making risotto, that step only takes about half an hour. And the results are more than worth it! All you need are a few choice ingredients and a bit of time at the stove and you’ll have a pot of creamy risotto that an Italian nonna (grandmother) would be proud of.

When I told my husband, Dan, that I was blogging about Rocky Road Brownies (find the recipe below), he turned to me and said, “The Rocky Road Brownies? That was the best dessert you ever brought home from EatingWell.” He might be right. Although every recipe that chocolate expert Alice Medrich developed for the latest issue of EatingWell is truly amazing, it’s quite possible that these Rocky Road Brownies were the Test Kitchen’s favorite. Are you one of the millions of Americans who cited losing weight as one of their New Year’s resolutions? I hope you haven’t given up yet. One of the 2011 resolutions my husband and I made is to eat more healthfully (and by default, lose weight).
