I heart leftovers. But I know not everyone does. Maybe it’s because many people think of leftovers as eating-the-same-meal-every-night-for-a-week. But I’m going to try to change your mind. It’s easy to transform certain leftover ingredients into completely different dishes if you think a little creatively. And using leftovers can help you save money and avoid waste. It seems that most summer parties, at least the ones I’m invited to, are potlucks. And since Labor Day weekend is on the horizon, there’s at least one more summer potluck on my social calendar. I know some of you hate potlucks, perhaps for the very reason I love them—none of the food really goes together. I like that, though—one of the best potlucks I’ve been to featured handmade spring rolls, Indian-spiced carrot soup and tiny profiteroles filled with homemade ice cream, among other tasty treats. There are about 97,634,347 things I’d rather do after work in the summer than make dinner. (Gardening, hiking, swimming, running, biking and porch-sitting-with-cocktail-in-hand, just to name a few.) I’m sure you can relate.
Even so, we still need to eat. And while it’s so easy to grab a burger on the way home, I’d rather make something that I know tastes great, is good for me and will help me save the money I would have spent on takeout.
