When I signed up for EatingWell's meatless May challenge, I had the best of intentions. I really, truly, wanted to try going meatless. I usually eat an almost meatless diet and the only reason I've never gone vegetarian is for the occasional hamburger, turkey at Thanksgiving and seafood, none of which I could bear to give up. I digress.
My intentions were there and then I looked at the calendar… on May 1 I was scheduled to fly back to the US from France and when I'm stuck on a plane for 8 hours I'll eat just about anything that's put in front of me. May 2 was the first Monday of the month and my favorite pizza place in town serves the most delicious pizza as a special only on the first Monday of the month. It has a delicious buffalo sauce drenched chicken on it. On May 3 I had dinner plans with friends at a great restaurant (that always serves perfectly cooked meats) for Restaurant Week. Just looking at the calendar was tempting me to cheat.
But so far so good: the vegetarian choice (manicotti) on the plane was, surprisingly, yummy. On Monday I skipped the pizza (they’ll have it next month) and made a new pasta recipe (with green beans, chickpeas, pesto and ricotta) I was itching to try instead. On Tuesday I found a vegetarian entrée at the restaurant (the only one, actually) that sounded delicious—and it was. Now that I’ve overcome what I thought was going to be the hardest first few days, I’m that much more motivated to keep it going. My upcoming obstacles: this weekend some omnivore friends are coming to visit. Sunday is Mother’s Day and my mother-in-law has requested that we grill (and grilling in our house usually means red meat or seafood). The third weekend of the month I’m traveling to visit my parents and they’re definitely the protein + vegetable + starch kind of crew. And then there’s the last weekend of the month: Memorial Day weekend. That’s one of two weekends a year that I usually allow myself a hotdog (or two). Tofu dog anyone?
