There's nothing like having a delicious, fruity cocktail on hand in the summer when you want to kick back and relax. Many summery drinks, however, are packed with sugar, carbs and calories, which can be tough on your waistline and energy levels. Plus, if you're on a low-sugar diet or are managing diabetes, it can be easy to forget, and overdo it with sweet beverages.
The good news? Oprah (yes, leave it to Oprah, always) just released her new favorite cocktail. She serves it up in cosmo glasses and calls it "Maui in December." Though, as she says, it's a year-round drink, we think it would be especially good by the pool the summertime! It has mint, vodka, pineapple, lemongrass, chamomile tea, and ginger! It seems a little like a low-sugar twist on the Moscow Mule, though with a lot more going on, so it definitely doesn't skimp on the flavor.
And while it's naturally a bit sweet (but more so tart), it's only sweetened with natural pineapple juice, so there's zero added sugars or artificial sweeteners. In addition to pineapple juice, there's also fresh pineapple that's grilled with some lemongrass for a serious flavor boost. Those two ingredients, with aromatic fresh mint, are then infused into vodka to make a liquor base for the cocktail. The finishing touches? She then uses muddled ginger, chamomile tea, and a squeeze of fresh lemon juice, which she then shakes together with ice and serves straight up.
How does the visionary describe it? "It's part zesty (from lemongrass and ginger), part fruity (from pineapple-infused vodka; yes, I'm a tequila fan, but vodka comes a close second), and one-hundred-percent refreshing." You can find the entire recipe over on Oprah Magazine.
Next time you're doing happy hour, ditch the bar and whip these up for your friends and family at home. Think of it as tropical perfection in a glass, with some health perks, too!
