Valentine's Day is cool and all, but this year, I'm all about Galentine's Day.

The day before Valentine's Day, aka "Galentine's Day," is a day designated by parks director Leslie Knope on Parks and Recreation to celebrate all the leading ladies in your life. I'll let Knope explain, "Oh it's only the best day of the year. Every February 13, my lady friends and I leave our husbands and our boyfriends at home, and we just come and kick it, breakfast-style. Ladies celebrating ladies. It's like Lilith Fair, minus the angst. Plus frittatas."

Amen, sister. My girlfriends and I relish this opportunity to celebrate our friendship and all-around female bad-assery. Not to mention literally any excuse to make Leslie Knope (world's biggest waffle fan) proud with our mean waffle-eating skills. Though the perfect Galentine's Day brunch isn't just about waffles, they are key. Round out the meal with a frittata—because Leslie said so, and for some protein power—a fresh salad, a little chocolate, and what would brunch be without Champagne? Our DIY Champagne cocktail bar is so much more than your average mimosa (especially this frozen version). Host your own with this menu for the perfect Galentine's Day brunch.

The Frittata

A great Galentine's Day brunch isn't complete without a frittata, which is basically a quiche without the crust. Frittatas are a super-easy, quick and delicious way to serve eggs to a large group. This healthy recipe swaps out potatoes for low-carb cauliflower florets. We love crumbled goat cheese on top, but feel free to add what you have—smoked Cheddar is a great full-of-flavor alternative.

The Waffles

A Knope-inspired party without waffles would practically be a crime, honestly. Yeast adds rich, tangy flavor to this whole-grain waffle recipe. These are best served with maple syrup and, if you're Leslie Knope, a dollop of whipped cream. Have an extra two minutes? Whip up this quick sauce with whatever berries you have on hand.

The Chocolate

Dark Chocolate Peanut Butter Truffles

Only the best brunches finish with chocolate, and these decadent truffles are the perfect Galentine's Day treat. Plus, they happen to be vegan, as coconut milk replaces heavy cream in the chocolate ganache filling. Not hosting this year? These truffles would make a perfect gift for the host and all your favorite women.
