Valentine's Day is cool and all, but this year, I'm all about Galentine's Day.
The day before Valentine's Day, aka "Galentine's Day," is a day designated by parks director Leslie Knope on Parks and Recreation to celebrate all the leading ladies in your life. I'll let Knope explain, "Oh it's only the best day of the year. Every February 13, my lady friends and I leave our husbands and our boyfriends at home, and we just come and kick it, breakfast-style. Ladies celebrating ladies. It's like Lilith Fair, minus the angst. Plus frittatas."
Amen, sister. My girlfriends and I relish this opportunity to celebrate our friendship and all-around female bad-assery. Not to mention literally any excuse to make Leslie Knope (world's biggest waffle fan) proud with our mean waffle-eating skills. Though the perfect Galentine's Day brunch isn't just about waffles, they are key.
