Don't worry, good ol' grilled cheese, we still love you. But sometimes we want to shake things up a bit. Welcome cheese toast, aka an open-faced grilled cheese or tartine. No need for a frying pan or spatula-cheese toasts can be thrown together with whatever you have in the fridge or pantry.

To make them, simply start with a slice of toasted baguette for the base (or you can use whatever bread or sturdy cracker you have on hand). Layer on your favorite cheese and a few other ingredients to fancy it up. For a go-to combo, try a little salty cheese topped with jam and some crunchy nuts or seeds. Or get creative and try one of the other ideas below.

Serve as appetizers or a snack, or pair one with your next soup or salad. The possibilities are meltingly delicious!

1. Fig Jam + Blue Cheese + Toasted Walnuts

A classic sweet, savory and crunchy trio, these cheese toasts also make a great holiday appetizer.

2. Prosciutto + Arugula + Pecorino Cheese

Modeled after the simple baguette sandwiches in Europe, a bit of cured prosciutto is paired with peppery arugula and earthy Pecorino cheese.

3. Cream Cheese + Smoked Salmon + Dill

This classic combination is usually served with a bagel, but it's fantastic on toast too. Sprinkle on red onion and capers, if you have them.

4. Ricotta + Lemon Zest + Fresh Cracked Pepper

Creamy ricotta gets an infusion of flavor when topped with pungent lemon zest and spicy cracked pepper.

5. Tomato + Cheddar Cheese

A fresh tomato topped with Cheddar cheese and toasted reminds us of tomato soup and grilled cheese.

6. Goat Cheese + Rosemary + Honey

Floral rosemary, creamy goat cheese and sweet honey make this cheese toast almost elegant.
