6 Squash Varieties We Are Loving Right Now (and Recipes to Go with Them)

I have a CSA share—that means I pay in advance to get a bag of vegetables each week from a local farm. I typically get a squash in the cooler months so I'm always on the hunt for new squash recipes.
Luckily my family loves to eat squash. And that's a good thing, as all varieties give you a big bang for your nutrition buck. One cup of cooked winter squash is high in both vitamin A (214% of the recommended daily value) and vitamin C (33%), as well as being a good source of vitamins B6 and K, potassium and folate.
Here are 6 of my favorite varieties plus delicious squash recipes to cook. Many squash varieties are interchangeable, so don't be afraid to experiment.

Blue hubbard: This huge squash with smooth gray skin and sweet, deep-orange flesh can weigh up to 40 pounds. Sometimes sold in wedges. Stores well; use in pies and soups.

Try it in: Creamy Rye & Butternut Squash Soup

Buttercup: Look for the characteristic "turban" at the stem end of this heirloom variety. Mild-­tasting flesh; can be a bit dry. Add cubes to a stew, mash or roast it.

Try it in: Mashed Squash with Caramelized Onions

Delicata: With a uniform size and shape, this oblong green-striped yellow squash is one of the easier ones to handle. Stuff or thinly slice (no peeling necessary) and roast.

Try it in: Quinoa-Stuffed Delicata Squash

Kabocha: This squash looks like a squat pumpkin with knobby green skin. Super-sweet with bright-orange flesh. Roast, mash or use in a pie.

Try it in: Galette with Kabocha Squash & Kale

Red kuri: A teardrop-shaped squash with bright orange skin, quite a few seeds and nutty almost-yellow flesh. Roast, mash or use in pies and soups.

Try it in: Winter Squash Risotto

Spaghetti: Drag a fork along the cooked flesh of this oblong squash to yield spaghetti-like strands that carb- and calorie-conscious diners adore.
