Healthy Weekly Dinner Meal Plan: Farmers' Market Fresh Dinners

5 quick and tasty meals that make the most of this season's best produce.

During farmers’ market season, on any given Saturday I’ll be part of the crowd strolling in the welcome sunlight from stall to stall. Visiting with the folks who grew, picked, packed and hauled the produce from their farms gives me an immediate grasp of what’s in season right now, right here. That’s local. So local, in fact, that the snap peas and fennel I’ve been craving are grown by a farmer who’s also one of our state representatives. That very night, I’ll turn them into a fresh and lovely slaw to pair with seared salmon. (The fennel fronds make a nice garnish.) Everywhere you look at the farmers’ market, dinner inspiration awaits.

If you’re lucky enough to have a lot of rhubarb, make a double or even a triple batch of the rhubarb sauce recipe and freeze it for later in the summer. It tastes great with grilled chicken and beef too.


Thursday: Summer Vegetable Pasta with Crispy Goat Cheese Medallions

This vegetarian pasta recipe is loaded with fresh vegetables—sweet spring onions, tangy cherry tomatoes and plenty of baby spinach. Goat cheese medallions are coated with panko and lightly crisped under the broiler, making this a restaurant-worthy yet super-simple and impressive weeknight dinner.


Friday: Smoked Trout, Potato & Arugula Salad

In this healthy dinner salad recipe, tender new potatoes and baby arugula add a creamy texture and peppery flavor to the smokiness of the trout. You can hard-boil the eggs ahead of time, but if you cook them while you steam your potatoes, they’ll still be a little warm when you serve the salad, which makes it extra special.
