7 Days of Healthy Spring Dinner Recipes

A meal plan with 7 spring dinners to look forward to.

To help you gear up for a week of eating healthy, fresh foods, we’ve put together a seasonal spring dinner menu of quick, healthy recipes. On Sunday, there’s a lovely vegetarian quiche with a creamy filling speckled with jolts of pickled jalapeño and Jack cheese. I’m going to prepare Monday’s hearty Sausage, Cabbage & Root Vegetable Soup on Sunday, too, since I’m cooking anyway and it keeps well. (Those leftovers will be great for lunch later in the week.) Wednesday’s dinner is a fast pan-seared salmon with a punchy lime sauce (energizing) and Friday it’s Quick Fettuccine Alfredo (comforting). With something delicious to look forward to every night, the week will fly by.

Saturday: Korean-Style Beef & Cabbage Tacos

This Korean-flavored steak tacos recipe uses cabbage in three ways: a crisp cabbage leaf acts as the shell, sautéed cabbage is part of the filling and pickled cabbage tops off the tacos. You can prepare most of the ingredients ahead, so all you have to do is assemble the steak tacos when you’re ready to serve.
