To help you gear up for a week of eating healthy, fresh foods, we've put together a seasonal spring dinner menu of quick, healthy recipes. On Sunday, there's a lovely vegetarian quiche with a creamy filling speckled with jolts of pickled jalapeño and Jack cheese. I'm going to prepare Monday's hearty Sausage, Cabbage & Root Vegetable Soup on Sunday, too, since I'm cooking anyway and it keeps well. (Those leftovers will be great for lunch later in the week.) Wednesday's dinner is a fast pan-seared salmon with a punchy lime sauce (energizing) and Friday it's Quick Fettuccine Alfredo (comforting). With something delicious to look forward to every night, the week will fly by.
Sunday: Mexican Vegetarian Quiche
This healthy quiche recipe is perfect for entertaining-the quiche can be made ahead and is just as flavorful served warm or at room temperature. Filled with cherry tomatoes, pickled jalapeños, Jack cheese and caramelized onions, this healthy quiche with a whole-grain crust is perfect for breakfast or brunch too. Monday: Sausage, Cabbage & Root Vegetable Soup
In this French-style healthy soup recipe, sausage, cabbage and root vegetables simmer together to make a comforting and healthy meal. Serve the soup piping hot with grated Parmesan cheese on the side. Like most soups, the flavors are even better if it's made a day ahead. Serve with a good baguette to soak up the broth.

Saturday: Korean-Style Beef & Cabbage Tacos
