One-pot dinners = less mess

In our house, the person who cooks dinner usually gets out of dish duty. I'm a pretty clean cook, so the kitchen is never too messy after I'm done making a meal. On the other hand, my husband, David, is like a tornado—and he'll be the first to admit it! He's getting better, but I still joke that when he cooks, all hands are needed on deck to clear up the mess.

I'll be traveling for work at the beginning of the week and know that when I get home I'll be totally exhausted and craving some extra-easy homemade meals to carry me through to the weekend. So, I'm relying on these one-pot, one-skillet and one-pan dinners that strategically cook everything together in a single vessel to help to keep our evenings simple and streamlined, from prep to cleanup.

Your Meal Plan

The types of recipes I crave in the fall, like cheesy pasta bakes, creamy soups and saucy stir-fries, are particularly suited to cooking in one pot or pan. Thursday's Chipotle & Corn Chowder recipe has been on repeat in my house lately—I love how hearty it tastes without feeling heavy and, of course, the fact that it all comes together in one pot. (See the review I wrote on the recipe for ideas on how to give this soup your own spin!) Make cleanup even easier by soaking skillets and soup pots in the sink while you eat dinner, and cover your sheet-pan with tin foil, so no scrubbing is necessary.

Sunday: Pork Chops with Creamy Mushroom Sauce over precooked brown rice

Monday: Sheet-Pan Chicken Fajitas

Tuesday: Shrimp Scampi Zoodles

Wednesday: One-Skillet Pastitsio with mixed greens topped with Maple-Balsamic Vinaigrette

Thursday: Chipotle & Corn Chowder

Friday: Tofu & Snow Pea Stir-Fry with Peanut Sauce

Big-Batch Lunch

It only takes 15 minutes to make a batch of these Spicy Ramen Noodle Cups. I'll prep these soup cups while David covers dinner, so we'll have grab-and go-lunch options for the rest of the week.
