I turned the heat on in my car for the first time the other day, which marks the true turn of the seasons! This cooler weather has me wanting all the cozy dishes I can get my hands on, and soup is at the top of the list. When I make soup I often double the recipe so I have enough for dinner and a few lunches for the week, plus some that can be stashed in individual servings in the freezer for easy meals down the road.
Your Meal Plan
The recipes I've chosen for this week are warming, comforting and ones you'll find yourself making again and again. Both of the soups freeze well and require very little work—in fact, all of the recipes in this week's plan taste like they took all afternoon to cook but actually take only about 20 minutes of prep time.
